Les Dames d’Escoffier, San Diego is excited to bring to you Heidi Pigeon who will be teaching a class on All Things Tiramisu. Heidi is a passionate, curious, and classically trained Pastry Chef. She is always looking for ways to expand her knowledge, as well as her experiences for personal and professional enrichment.
Heidi has studied at the Culinary Institute of America – Hyde Park, NY in Food Product & Food Concept Concentration with a Master of Professional Studies – Food Business. Heidi currently works as the Executive Pastry Chef at Tanuki Ochaya x Sake Bar in Kensington. She designs and produces their award-winning gourmet eclair line, creates Japanese, French, and Italian inspired desserts.

*Ladyfingers from scratch
*Assemble a Strawberry & Rose Tiramisu
*Tiramisu Truffles in Traditional, Strawberry Rose, and Limoncello
